Ammon, a cherished husband, father, brother, and esteemed educator, passed away on August 26, 2026, at the age of 80. Born September 9, 1945, in Wooster, Ohio, Ammon was the beloved son of the late Calvin Huntley Peck, III and Jane B. Critchfield Peck.
From a young age, Ammon exhibited a keen intellect and a deep passion for science. He pursued his academic dreams with vigor, earning a Bachelor of Science in Bacteriology from Syracuse University in 1968 and a Doctor of Philosophy in Medical Microbiology from the University of Wisconsin in 1972. His dedication to the field of medical microbiology was not just a career but a testament to his lifelong commitment to education and the betterment of others.
His career as a microbiologist and immunologist was marked by pioneering research in autoimmune diseases, with a focus on diabetes and Sjögren’s syndrome. Ammon’s work garnered international acclaim, including collaborations with the prestigious Karolinska Institutet in Sweden, though his primary academic affiliation was with the University of Florida. Ammon was a man of many interests. Despite being allergic to almost every animal, he held a special fondness for them, particularly two dear companions, Moment and CC. His love for animals was matched by his passion for collecting stamps, a hobby that brought him immense joy and satisfaction over the years. On sunny days, he could often be found on the golf course, enjoying the challenge and winning equipment for his lab.
Ammon was known for his remarkable ability to bring people together. His quick wit and infectious smile had a way of making everyone feel included and appreciated. He viewed teaching as a calling, not just a profession, and his influence extended far beyond the classroom. He maintained relationships with many students well into their professional career that he helped to mold. He touched the lives of many people with wisdom, kindness, and humor.
Ammon is survived by his beloved wife, Ing-Marie, whose partnership was a source of strength and joy throughout his life. He leaves behind two daughters, Anja and Alyssa, who will continue to carry his legacy forward with love and determination. Ammon is also survived by his brothers, Cal and David, who shared many cherished memories with him over the years.

A respected immunologist and pathologist, he served for many years at the University of Florida, contributing to both the College of Medicine and the College of Veterinary Medicine.
As a professor in the Department of Pathology, Immunology and Laboratory Medicine at the University of Florida College of Medicine, Ammon pursued important questions in immunology and disease biology. His work included research into immune-system dysfunction, autoimmune disease, transplantation, and experimental models used to better understand human illness. Through his scholarship, he helped expand scientific knowledge while contributing to the development of future physicians, veterinarians, scientists, and educators.
Ammon’s professional influence extended well beyond his laboratory and classroom. At the University of Florida College of Veterinary Medicine, he was recognized as an accomplished researcher and professor and served as Associate Dean for Research and Graduate Studies. In that role, he helped strengthen the research mission of the college, supported graduate education, and encouraged collaboration among investigators and across disciplines.
